I’mmm baaaacck!!!!! A BIG HELLO to ALL! Did ya miss me? I missed posting to my blog but I so needed this blogging break. So I’m almost back in blogging mode and sheesh, I just noticed the last blog I posted was towards the end of May when I posted my Mini Strawberry-Lemon Cheesecakes. Time sure flew by. Here in Florida we’re several weeks well into a new school year. I don’t know about you but the school year always throws me for a loop in terms of food and what to cook because of work, kids doing homework and needing to be fed and in bed by a certain time. Well because of that and because we’re almost heading into fall, I decided to post the first soup recipe for the “almost” fall season fast approaching us. This is about the easiest recipe you’ll find for making a delicious bowl of creamy potato & bacon chowder in less than 30 minutes. This time frame is based on using a pressure cooker. It’s so cold here in Florida that I had to turn to comfort food to try to get warm. My favorite comfort food – Asopao de Gandules con Bollitas de Platanos (PRONUNCIATION: ahh-so-pow— dae — gone-doo-lez –cone– boy-gee-toz — dae –plot-ahh-nose). Continue reading →

This recipe is as simple as it can get when it comes to making Puerto Rican-Style chicken stews (or as we call it in Puerto Rico, asopao de pollo). Takes me back to when I was a little girl. When my grandmother made this stew everything was right with the world. Hers used to have green olives in it as well but being that many people do not like it (including my wonderful husband), I did not include it. You can if you’d like to, everyone has options in life. 🙂 Continue reading →
Oh boy can I just tell you how deeelicious (no, it’s not a typo) this soup is? No? – Well then you’ll have to make it for yourself to find out just HOW delicious it is.
I NEVER need an excuse for making soup cause I LOVE soup. It’s just comfort food for me plain and simple. One of my sons’ refuses to entertain the thought of soup unless he’s sick and if you’re one of those, then by all means skip this one. You may want to reconsider though, this one has – wait for it – BACON! Continue reading →
I started this new year sicker than a dog (don’t know what that means or where that phrase came from – my little dog, Max the Maltese, started this new year great!), anyway, yup that’s how it started, sneezing incessantly, ears stuffed, nose stuffed, headache, yeah you get the picture.
