Easy Chocolate Flancocho | Flancocho

chocolate flancocho2 pmaks

You know what’s my favorite dessert?  Flan!  Definitely love flan, but wait aaaannnnddd I love chocolate cake as well, yup love that too.  So the other day I was pondering making a dessert, but just couldn’t decide what.  I decided on making a chocolate cake because if you’ve followed my blog and based on previous posts, you could say I am sort of addicted to chocolate. Love the stuff can’t get enough of it.  On the other hand, I felt I wanted flan as well. Then I remembered, hey I haven’t made a flancocho in a looooooonnnngggg time and I haven’t blogged about it either!  I don’t exactly know when this cake became a Puerto Rican dessert, but given the many different variations of it around the internet and recipes posted by “Puerto Ricans”, it has officially become ours 🙂 . Puerto Rican Eggnog Punch (Ponchè de Coquito Puertorriqueño )

ponchè de coquito

So I thought long and hard about what the title of this post should be, because let’s be frank…people are fickle at times, but “ya can’t please everyone, so ya got to please yourself” (sorry, I felt a song coming on).  I decided on calling this post “Puerto Rican Eggnog Punch (ponchè de coquito).”  I could have just called it by what it’s 100% known as which is “coquito” but this is where the controversy would have begun and quite frankly, I didn’t want to deal with the drama upheaval that would follow, sorry.  No I’m not sorry! Puerto Rican-Style Chicken Stew with Rice (Asopao)

puerto rican-style chicken stew with rice

This recipe is as simple as it can get when it comes to making Puerto Rican-Style chicken stews (or as we call it in Puerto Rico, asopao de pollo).  Takes me back to when I was a little girl. When my grandmother made this stew everything was right with the world.  Hers used to have green olives in it as well but being that many people do not like it (including my wonderful husband), I did not include it.  You can if you’d like to, everyone has options in life.  🙂 Continue reading →

Sofrito (Puerto Rican Seasoning Base)

RecaoaksSo I decided to regress and share the secret to Puerto Rican Cuisine.  Many of you may know it, but in order to help those who don’t, re-create many of my blogs’ recipes, I’ve come to the conclusion that I have to go back and explain and share the success to most of these recipes.  That secret is: SOFRITO (pronounced: so-free-toe).

carnemechadaclaks

Disclosure:  I didn’t even know how I would  accurately translate the title of this dish from Spanish to English other than with the name I gave it.  Seriously, it took me so long to think what I should call it, I nearly didn’t post it.  Continue reading →

Beef Empanadas (Puerto Rican Style)

Every now and then I get somewhat nostalgic and start to reminisce about foods that I used to have when I was young. This past weekend was one of those times. It did help that I had all the ingredients to indulge in this latest craving. Continue reading →

Puerto Rican Hearty Beef Noodle Soup (Sopa de Caldo de Res con Fideos)

Sopa de carne de resI started this new year sicker than a dog (don’t know what that means or where that phrase came from – my little dog, Max the Maltese, started this new year great!), anyway, yup that’s how it started, sneezing incessantly, ears stuffed, nose stuffed, headache, yeah you get the picture.
