You know what’s my favorite dessert?  Flan!  Definitely love flan, but wait aaaannnnddd I love chocolate cake as well, yup love that too.  So the other day I was pondering making a dessert, but just couldn’t decide what.  I decided on making a chocolate cake because if you’ve followed my blog and based on previous posts, you could say I am sort of addicted to chocolate. Love the stuff can’t get enough of it.  On the other hand, I felt I wanted flan as well. Lately, I’ve seen a growing number of my friends not being able to eat a certain type of food because of the ingredients these foods contain.  They are prone to dealing with allergic or gastrointestinal problems of different kinds, some even life-threatening if they attempt to cross that line.  It has gotten out of control, the number of people who cannot ingest or come near to foods that have among the ingredients, nuts, dairy, wheat, eggs, tomato and so many other things.  This easy eggless chocolate cake has been around for a long time and called by a variety of names, but I call it the perfect answer to anyone who suffers from not being able to eat cake because they are allergic to eggs or for those following a vegan lifestyle (although if you’re vegan you may want to use raw sugar and skip my frosting recipe that I’ve included here, this cake tastes just as good with no frosting on it). No-Bake Strawberry Chocolate Ganache Tart


A while back I purchased a rectangular tart pan from William Sonoma because I swore up and down that I needed it. I convinced myself (and my hubby) that there were so many things I was going to do with it.  So many cooking adventures I hadn’t taken because I didn’t have this tart pan.  First I would make a puff pastry fruit tart, different varieties of Quiche, veggie tarts, tomato tarts, you get my drift.  I was going to be the next tart queen.  Well, I never got around to doing anything remotely close to what I said I would do with my rectangular tart pan until I came across this recipe and OMG!  If good things come to those who wait, then wahoo and yay for me waiting. Fast and Easy Maple Nut Butter Rolls


So, last year I was given a “gift” from a co-worker whose sister lives in Vermont and sends her care packages every year around this time.  Her care package consists of a variety of canned goods, including but not limited to, strawberry preserves, tomato sauce, orange marmalade and nut butters (chocolate, peanut) you catch my drift.  Well….apparently, “Paula” used to live in Vermont and had her fill of “Maple” butter nut so she very GRACIOUSLY offered to bring me this jar of Maple Butter.
