Chicken Meatballs Home-made Dog Treats | chicken meatball

This recipe is for the dogs.  No, I’m serious – it is literally for the dogs, for the pooch in your life. I have two pooches in my life: one is my own, Max (the “Maltese”), and recently we’ve acquired another (although he doesn’t live with us), Odin (the “Shelty”) my son’s dog.  These two pups are the reason for this Chicken Meatballs recipe.  Continue reading →

Easy Creamy Potato and Bacon Chowder | potato and bacon chowder

Easy Creamy Potato and Bacon Chowder front akspm

I’mmm baaaacck!!!!!  A BIG HELLO to ALL!  Did ya miss me?  I missed posting to my blog but I so needed this blogging break.  So I’m almost back in blogging mode and sheesh, I just noticed the last blog I posted was towards the end of May when I posted my Mini Strawberry-Lemon Cheesecakes.  Time sure flew by.  Here in Florida we’re several weeks well into a new school year.  I don’t know about you but the school year always throws me for a loop in terms of food and what to cook because of work, kids doing homework and needing to be fed and in bed by a certain time.  Well because of that and because we’re almost heading into fall,  I decided to post the first soup recipe for the “almost” fall season fast approaching us.  This is about the easiest recipe you’ll find for making a delicious bowl of creamy potato & bacon chowder in less than 30 minutes.  This time frame is based on using a pressure cooker.  But not just any pressure cooker. Mini Strawberry-Lemon Cheesecakes | Strawberry Cheesecakes

So I LOVE cheesecake. No, I SERIOUSLY love cheesecake.  More specifically, I love Strawberry Cheesecake!  Do you want to know how much? Okay, so when my friends threw me a baby shower for my daughter, Jasmine (over 13 years ago folks, don’t get excited), one of my friends made my FAVORITE cheesecake:  Strawberry Cheesecake.  To this day, Lessie Kelly makes the best cheesecakes EVER! So at my baby’s baby shower (again, over 13 years ago), I had in my possession for me and me alone a huuuuggggge strawberry cheesecake all to myself. Or so I thought. Continue reading →

Easy Chocolate Flancocho | Flancocho

You know what’s my favorite dessert?  Flan!  Definitely love flan, but wait aaaannnnddd I love chocolate cake as well, yup love that too.  So the other day I was pondering making a dessert, but just couldn’t decide what.  I decided on making a chocolate cake because if you’ve followed my blog and based on previous posts, you could say I am sort of addicted to chocolate. Love the stuff can’t get enough of it.  On the other hand, I felt I wanted flan as well. Then I remembered, hey I haven’t made a flancocho in a looooooonnnngggg time and I haven’t blogged about it either!  I don’t exactly know when this cake became a Puerto Rican dessert, but given the many different variations of it around the internet and recipes posted by “Puerto Ricans”, it has officially become ours 🙂 . If you’ve never had a Cuban sandwich called medianoche but have had a Cuban sandwich (a Cubano) you’re probably wondering what the difference between the two are – after all both originate from Cuba and they both have the same filling ingredients, namely: sweet ham, roast pork, Swiss cheese and pickles.  Continue reading →

Baked French Toast Casserole

Oh man…Baked French Toast Casserole. Do I have your attention?  Good!  French toast that’s prepared overnight, then baked as a casserole the next morning!  Genius just genius.  I’m not going to chit-chat too much about this recipe post, I am only going to recommend to you this: MAKE THIS TODAY!  Seriously you need this recipe if any of these is your case:  1) You have company or family visiting this weekend and are kind of having anxiety panic attacks as to what to feed this crowd tomorrow morning; 2) You definitely know you don’t want to be in the kitchen cooking all sorts of different things for your guests tomorrow morning; but on the other hand 3) You definitely know you can’t afford to take your guests to a crowd-filled, over-priced restaurant for breakfast/brunch; more importantly 4) You really want to spend time and mingle with your family/friends not spend time slaving away in the kitchen!  Continue reading →
